Try putting the exclude option as the first option in the command line.
hint
tar --exclude='foobar' -zcvf foorbar.tar.gz
not
tar -zcvf foorbar.tar.gz --exclude='foobar'
Also mmaker needs libxml2-dev to avoid compile errors.
